



1/2 cup water
1/2 cup apple juice
1/2 cup white sugar
2 pints frozen blueberries
1 wedge brie (Fromager D'Affinios Brie Double Cream)
15 mini phyllo shells
honey (to drizzle on top)

Stir together the blueberries, water, apple juice and sugar in a small sauce pan. Bring to a boil over medium-high heat.
Reduce heat to low and simmer until the mixture has reduced to the consistency of syrup; about 10 minutes.
Scoop brie into little balls and place in bottom of phyllo cups.
Spoon a little of the blueberry sauce on top of the brie.
Place finished brie cups on a sheet pan and drizzle with honey.
Bake at 350 degrees for 5 to 10 minutes.
