Spinach Salad With White Stilton With Apricots

1 1/2 tablespoons olive oil
1/4 teaspoon balsamic vinegar (+ 1/8 teaspoon)
6 ounces baby spinach
3 ounces White Stilton with Apricots, crumbled
1/2 avocado, sliced
1/4 cup pistachios (roasted and salted) or walnuts or almonds


Whisk together olive oil and balsamic vinegar.
In a salad bowl, combine spinach, White Stilton, avocado and pistachios.
Drizzle dressing over salad mixture and toss gently.
Serve immediately.
