Barbecue Chicken Casserole

1 package Simply Potatoes shredded hashbrowns
1 cup (8 ounces) shredded sharp cheddar cheese
1/2 cup onion, chopped
1/2 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons Cucina Viva olive oil
4 boneless chicken breast halves
1 cup K.C. Masterpiece barbecue sauce


Heat oven to 400 degrees. Spray 9 x 13 glass baking dish with non-stick cooking spray. Place potatoes, cheese and onion in baking dish. Sprinkle with salt and pepper; drizzle with olive oil. Mix well.

Spread potatoes into a thin layer covering the bottom of the baking dish.
Arrange chicken breasts on top of potatoes. Pour desired amount of barbecue sauce over each breast. Bake, uncovered, for 30 to 35 minutes or until chicken is no longer pink and potatoes are crisp and golden brown
