Cinnamon Marinated Grilled Chicken Breasts with

CINNAMON MARINATED CHICKEN
1 quart water
1/4 cup salt
1/4 cup brown sugar, packed
4 boneless, skinless chicken breast
1 vidalia onion
2 slices lemon
2 sticks cinnamon, broken

CHERRY BARBECUE SAUCE
1 cup chicken stock
1/2 cup cherry preserves
1/3 cup Sendik's Fresh Orange Juice
1/4 cup fresh lemon juice
1/2 teaspoon grated lemon peel
1 tablespoon brown sugar, packed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground clove
2 tablespoons kirschwasser
1/2 cup ruby port
2 teaspoons cornstarch
1/4 cup orange marmalade
2 tablespoons ketchup
cayenne pepper, to taste

Place all ingredients for the Cinnamon Marinated Chicken in a large ziplock bag. Seal the bag and squeeze the contents until mixed well. Refrigerate overnight.

Prepare the Cherry Barbecue Sauce. Combine chicken stock, cherry preserves, orange juice, lemon juice, lemon peel, cinnamon, brown sugar, and cloves in a saucepan. Reduce this by 1/4 the starting volume. Whisk port and cornstarch together. Add the orange marmalade, ketchup and cornstarch to the broth whisking continually. Simmer until sauce thickens and flavors meld together.

Prepare your grill. When grill is ready, remove the chicken breasts from the marinade. Grill for about 6 to 8 minutes per side. Brush each chicken breast with Cherry Barbecue Sauce and serve. Enjoy!
