Sesame Brown Rice Salad with Chicken

1 cup long-grain brown rice (brown minute rice will work)
2 cups cooked chicken breast, thinly sliced
1/2 cup shredded carrots
1/3 cup sliced green onions
1/4 cup dry roasted peanuts, divided
1 tablespoon chopped fresh cilantro, divided
1/2 teaspoon salt

2 tablespoons fresh lime juice
4 teaspoons canola oil
1 teaspoon dark sesame oil
2 cloves garlic, minced


Cook rice according to package directions, omitting the salt. Transfer rice to a large bowl; fluff with fork and let cool. Add chicken, carrots, onions, 2 tablespoons peanus, 2 teaspoons cilantro and salt to rice; toss to combine.
Combine dressing ingredients in a small bowl and drizzle over rice mixture; toss to combine. Place on plates and sprinkle the remaining peanuts and cilantro to garnish. Enjoy!
