Chilled Gazpacho

1 1/2 cups cucumbers, peeled, seeded and diced
1/2 cup avacado, diced
1 1/2 cups tomatoes, diced small
3/4 cup green pepper, diced small
3/4 cup red pepper, diced small
3/4 cup onion, diced small
3/4 cup celery, diced small
1/8 cup Regina Red Wine Vinegar
1 1/4 quarts Dei Fratelli Tomato Juice
2 tablespoons garlic, chopped
6 jalapeno peppers, finely diced
4 tablespoons lemon juice
5 tablespoons cilantro, chopped
salt and pepper, to taste
1/2 cup Cucina Viva Extra Virgin Olive Oil


Mix all ingredients in a large non-reactive bowl. Stir as you add the last ingredient, olive oil. Let chill for at least 2 hours to allow flavors to mingle.
