'Beat Philly' Cheese Steak
directions

4 fresh sub buns
1 pound rib-eye steak, thinly sliced
1/2 pound provolone cheese or mozzarella cheese, thinly sliced
1 large sweet onion, thinly sliced
1 large green bell pepper, thinly sliced
2 teaspoons garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil

Preheat oven to 200 degrees F.
Wrap sub buns in aluminum foil and place into preheated oven.
Heat cast-iron skillet or griddle over medium-high heat. When hot add the olive oil, onions and bell peppers; cook, stirring until caramelized.  Add the garlic, salt and black pepper and cook, stirring for 30 seconds.
Push onions and peppers off to the side of the skillet or griddle. Add the steak to the hot pan and cook, stirring until almost no longer pink.
Mix the sauteed onions and peppers with the steak.
Top with cheese slices and melt.
Spoon the cheesy meat mixture into the warm buns and serve.
