Chicken - Grilled Bourbon Chicken

• 4 chicken breasts (about 1 1/2 lbs.)
• 1 cup cilantro, chopped
• 2 limes zested and juiced
• 1/4 cup honey
• 2 tbsp. Knob Creek Kentucky Straight Bourbon Whiskey
• 1 tbsp. soy sauce
• 1 tbsp. olive oil
• 3 garlic cloves, chopped
• 1/2 tsp. salt
• 1/4 tsp. pepper

1. Place chicken in a ziplock bag. In a medium bowl combine cilantro, lime zest, lime juice, honey, bourbon, soy sauce, olive oil, garlic, cilantro, salt and pepper. Pour into a blender and blend until smooth. Pour the sauce over the chicken and seal the bag. Marinate in the fridge at least 3 hours.

2. Heat up a gas or charcoal grill*. Place the chicken on the grill over medium heat. Cover the grill; cook 12 to 15 minutes, and brushing with remaining marinade, until the juice of the chicken is clear when center of thickest part is cut. Serve with lime wedges and fresh cilantro.

*Use wood chips for added smokiness to the recipe.  Wrap damp wood chips in a foil packet, piercing holes into the top of the packet.  Place on the grill directly over the heat to create smoke. Move the packet to the cooler side and add the chicken to grill for added flavor
