Brussels Sprout Salad with Orange Vinaigrette

• 4 cups brussels sprouts washed and trimmed
• 1 large apple chopped into 1" cubes
• 2/3 cup walnuts roughly chopped
• 1 cup Wetherby dried cranberries
• Orange Vinaigrette Dressing:
• 1/2 cup fresh orange juice
• 1 tbsp olive oil
• 1 1/2 tbsp apple cider vinegar
• 1 tsp honey
• 1/2 tsp salt or to taste


1. Slice or shave your brussels sprouts using a mandolin or food processor.
2. In a large bowl add sliced brussels sprouts, chopped apples, walnuts, and cranberries.
3. In a small bowl, mix the orange juice, olive oil, apple cider vinegar, honey, and salt for the Orange Vinaigrette.
4. Pour the Orange Vinaigrette over the brussels sprouts mixture and toss. Serve immediately or cover and store in the fridge for up to 5 days.
